Watermelon, Arugula, & Feta Salad with Honey Lime Vinaigrette
Honey Lime Vinaigrette Ingredients:
Zest of 1 Lime
1/4 C. Fresh Lime Juice
1 T. Honey
1/4 tsp. Sea Salt
1 T. Citrus Champagne Vinegar
1/4 C. EVOO
5 oz. Arugula
2 C. Watermelon, chopped
1/2 C. Cucumber, chopped
1/2 C. Walnuts, chopped
3 oz. Feta
Chicken or Shrimp (optional)
In a half pint sized mason jar add ingredients for dressing. Place lid on tightly and shake.
In a large bowl add arugula, 1 cup of watermelon, 1/2 cup cucumber, 1/4 cup walnuts, and 1.5 ounces of feta. Toss Lightly.
Add remaining watermelon, feta, and walnuts to the top for presentation.
Top with Chicken or Shrimp.
Serve dressing on side. Enjoy!
